A little yeast and cooked apple on the nose suggests some re-fermentation
in bottle but owner Noel Pinguet doesn’t seem fussed by it and perhaps
it’s because the other flavours on the palate are so attractive with
candied citrus peel and apricot and pear. Leave it alone for a few years
and I expect the best elements will win out.

and citrus with a touch of fudge suggesting maturity. Palate is off dry
but well balanced and has fascinating mineral character.
